Nutty Apple Dip {Recipe}

A few weeks ago we went to a friends house for game night (it was actually the night before my 30th birthday, so I can proudly say that I spent my last minutes in my 20’s playing Cranium!). One of our friends brought a bowl of deliciousness that she called apple dip. There were no apples in this dip, but she did bring a bag full of them to be dipped in this bowl of deliciousness. Before we left, I asked her for her recipe, which was simple- a block of cream cheese, a cup of sugar and some chopped peanuts. My arteries pretty much closed up at the thought of all that fat, but it was so good that I couldn’t stop thinking about it, so I decided to try to recreate her recipe and make it a bit more health conscious.
Now, I’m not saying that this is the most healthy thing out there, but I did tweak it and cut down on the fat and calories by a considerable amount, and I even added in some Greek Yogurt because hey- who doesn’t love a recipe that has Greek yogurt in it?
Nutty Apple Dip
Apple Dip
1/2 c. peanuts (I used honey roasted for extra flavor)
1 (8oz) package of Neufchâtel cream cheese (it is the 1/3 fat cream cheese), softened
1 (6oz) container of plain Greek yogurt
1/2 c. sugar
1/2 c. brown sugar
cinnamon – {optional} to taste

Chop the 1/2 cup of peanuts until they are in tiny chunks (you could hand chop them, but I just pulsed them in my mini food processor for a few seconds) They should look like this:

In a large bowl, cream together the softened cream cheese and sugar until well blended using a hand mixer. Add the Greek yogurt and brown sugar and continue to blend until fully mixed and no large lumps remain. Pour the chopped nuts into the bowl and stir by hand. Optional- if you really want this to taste like apple pie, sprinkle a teaspoon or so of cinnamon over top before serving. It’s like fall in a bowl!
Serve with cut up fruit or cookies to dip– we like it best with apple slices or graham crackers, but the possibilities are endless! I’m sure strawberries, pineapple, pears or any other fruit would taste amazing dipped in this!
