I am a born and bred Jersey Girl which means my summers are spent at the beach. Since I’m so close, I have the luxury of being able to just go for a few hours and leaving when the beaches start to get crowded with tourists (or bennys as the locals call them). Even so, I usually pack a lunch since a day at the beach can really work up your appetite! My sister is my usual beach partner, and our usual beach ritual involves a stop at WaWa (a continence store in the northeast) for one of their subs or salads.
However, there’s only so many subs one can eat, so I decided to try to come up with an easy alternative- something that can be made quickly in the morning before we leave, and something that will hold up well in the cooler. My sister tries to eat gluten free, and with my upcoming wedding, we’re also both trying to eat healthier, so that played an important note in my new recipe.
After wandering around the food store, this is what I came up with– an easy, protein packed, summer salsa. It was tasty, filling and healthy! We paired it with some tortilla strips and a bowl of watermelon for an easy beach lunch that didn’t weigh us down so we could still ride the waves when we were done!
Easy Summer Salsa
– 1 ripe avocado, diced into 1/2 inch cubes
– 1 cup of edamame beans, shelled (I used frozen edamame beans- they were thawed by the time we ate lunch, but if you are eating it right away, make sure to thaw them earlier)
– 1 can of mexi-corn (Green Giant makes my favorite Mexi-corn- it is corn with black beans and diced red peppers)
This is going to be a tough one, are you ready?
Combine all ingredients in a bowl and mix well.
Chill until ready to serve. Serve with your favorite tortilla chips.
I’m thinking this would also be awesome in a wrap- maybe paired with some hummus? Easy, delicious, loaded with healthy fats and protein. Perfect!
Now, usually avocado browns easily, but I have to say, I’ve had the leftovers in the refrigerator for 2 days now and the avocado is still green!
