Refreshing Watermelon Smoothie {Recipe}

Aaahhh, summer. The word alone conjures up happy thoughts of lazy days spent by the pool or on the beach, weekend family gatherings eating hot dogs on the grill, s’mores by the fire pit and watermelon…lots and lots of watermelon. I could eat watermelon all day every day…and in the summer, I pretty much do. Today however, I drank my watermelon; I blended it into a refreshing smoothing perfect for a mid-morning snack!

Watermelon Smoothie

-1 cup of cut up watermelon (to make it especially refreshing, I place mine in the freezer for an hour or so)
-1/2 cup of coconut water (any flavor is fine- I only had pomegranate on hand, so that’s what I used)
-{optional} ice- if your coconut water isn’t chilled or you don’t feel like waiting for your watermelon to freeze you can add in a few ice cubes to chill it.

1. Cut up about 1 cup of watermelon into bite sized cubes.
2. Place into a blender (or Magic Bullet/Ninja personal blender)
3. Pour 1/2 cup of coconut water over top
4.{Optional} Add in a few ice cubes for added chill.
5. Blend until smooth
6. Pour into a glass and enjoy!
